I know..I know..everyone’s resolution is to eat healthy and to lose weight. Well, I plan to really do it this year and now that I have a blog I am going to post my journey for accountability. Full Disclosure..I am 5’3 and weigh 148 lbs. Now, that is a big accomplishment for me considering I ended my pregnancy weighing 200 lbs. My whole life I was never a size 0 so I’m not trying to lose a huge amount of weight (10-15lbs) but I am trying to get healthier. I am a teacher so I have a limited amount of time to eat and unhealthy options are usually the fastest..it doesn’t help that near my job there is a McDonalds, Burger King, Dunkin Donuts, Wendy’s and two pizzerias.. 🙂 Insanity..I know…
However, recently I have been feeling rundown and without energy..all I want to do is veg out on the couch and not do anything..now with a two year old that is almost impossible and I know it’s time to make a change.
Another Admission: I am NOT a cook..I do not like to cook..I do not even know how to cook..I eat at my parent’s house everyday..yes I am married and have a child and yes, I drive there EVERYDAY to eat dinner. BUT for the sake of my health I am going to try to make my breakfast and lunch. I have been searching and looking for easy recipes that even the dumbest cook can make (me). I will post my recipes as I go along.
– 1 Avocado–to put avocado on my cold cut sandwich.
– Whole Wheat Bread- To make sandwiches
– Cold Cuts (Ham and Swiss Cheese)
– Apples, Blueberries, Bananas, oranges, grapes
– String Beans (A yummy recipe that I will post)
– Kale (For smoothies)
– Lemon & Ginger Root (for Detox water)
– Hot Dogs
– Elbows Pasta–to make macaroni salad
– Light Mayo- to make macaroni salad
